Where to start
Get your food registration first. You will need either a Food Control Plan (for most restaurants) or a National Programme (for lower-risk operations).
You also need to register your business with the New Zealand Companies Office.
Selling alcohol
If you plan to sell alcohol for consumption on-site, apply for an on-licence. You must also have at least one staff member with a Manager’s Certificate (alcohol). Before applying for an alcohol licence, you need certificates confirming the site meets Building Code and Resource Management Act standards.
Verification
All food businesses must be checked by a recognised verifier (either us or an independent agency) within six weeks of opening.
You also need to make sure the kitchen layout follows food safety regulations.
Other things you might need
You may need building and resource consents for renovations.
You may need an outdoor dining licence.
Someone on your team may need formal food safety certification.
